Mace is the spice made from the reddish/ orange seed covering of the nutmeg seed. Mace belongs to the family Myristicaceae and species Myristica fragrans.  Its flavor is similar to nutmeg but more delicate; it tastes more pungent and spicier than nutmeg and is used to flavor bakery, meat, fish, vegetables and in preserving and pickling.
