Dehydrated lime is made by drying matured fresh limes by using automatic driers and the traditional method of sun drying. About 15 kg of
dried lime with acceptable flavor and aroma could be obtained from 100 kg of fresh lime. Black dry lime is used in Arabian recipes for preparing rice and curry. It can also be powdered and sprinkled over roasted meat. The color of dehydrated lime varies from yellow to black depending on the drying method. Dehydrated lime is used in cooking and also crushed & mixed with water for a refreshing drink with very high Vitamin C content.
